White Truffle (Tuber Magnatum Pico)

White truffle is considered as “white gold” and is the most precious variety of Tuber Magnatum Pico.

Identikit:

  • Shape: undulating or flat, white truffle has variable sizes. It has an irregular shape if the soil was hard, characterised by the presence of stones or roots which did not allow the free growth of the tuber. On the contrary, its aspect will be smooth and regular if the soil in which it formed was friable.
  • Color: it has a slightly velvety surface of colours ranging from light cream to yellow ochre. Inside, its flesh goes from cream white to yellowish with shades that may vary according to its maturation, the type of soil and the plant with which it lives in symbiosis.
  • Aroma: Unique, its odour is intense and fragrant. Much stronger than other types of truffle.
  • Taste: Slightly spiced, it vaguely resembles that of Grana Padano (similar to Parmesan cheese).
