The Summer truffle is at the other end of the spectrum from the intense black winter truffle.

 

Identikit:

  • Shape: variable, it grows both in sandy and in argillaceous soils.
  • Color: From brown to black on the outside when it matures, while its flesh ranges from cream to hazelnut, with small pale veins.
  • Aroma: soft and delicate, “of underwood”.
  • Flavor:  similar to the best edible bolete mushrooms.
