Fine black truffle is considered as “black gold” and is the most internationally used variety.

 

Identikit:

  • Shape: Dimensions are extremely variable and range from those of a hazelnut (the most common) to those of a big apple (the rarest) getting to weigh even one kilogram.
  • Colour: The truffle has a black coarse surface and a black-purple flesh, with thin white veins which turn to red when exposed to the air and tend to black while being cooked.
  • Aroma: Delicate and pleasant scent, almost sweetish for its particular flavour. It is often defined as “sweet black truffle”.
  • Flavor: Strong and balanced.
